MAMMA'S "POMODORI E RISO CON PATATE".
This is one of the dishes my mother-in-law does especially well: Tomatoes stuffed with rice, with roast potatoes.
I decided to follow her step-by-step because the last time I tried on my own it didn't turn out well. Now I have no excuse. It's an excellent dish for the summer because it can be prepared the day before and eaten cold - infact we prefer it that way.
Total prep time: 1 hr - Cooking time: approx 40 mins - this will depend on individual ovens.
